Do I have a recipe for all of you vegans, vegetarians, health conscious eaters, Indian food lovers, and anyone else who likes to eat out there - Crock Pot Chickpea, Butternut Squash and Red Lentil Stew! Yum.
I stumbled upon this dish on Eat, Live, Run and I am so happy I did. This dish has a ton of different flavors and it is healthy! I didn't even end up adding any salt because it had so much taste on its own. It was also super easy to make. Saute a few vegetables, put everything together in the crock pot, turn the slow cooker on for 8-10 hours, and enjoy! (I actually made this yesterday and heated it up for dinner tonight which allowed all of the flavors to marinate a bit longer). This dish goes especially well with a side of garlic naan bread.I will definitely be making this again very soon and I urge you all to test it out too.
